Eduardo Castillo

Since the first day we opened our doors at Matt’s Red Rooster Grill, Eddie has been here on the grill.  Amazingly, through 100 degree days (where sometimes he had to grill outside so the restaurant could stay cooler), a black out, snow storms, and even a hurricane…Eduardo Castillo has been here for almost 10 years working our grill.

The first week of April, just after celebrating his 39th birthday, Eddie was sent to Hunterdon Medical Center with paralysis of his left side. It was the first time the kitchen was without Eddie.  He was in the hospital for over 3 months. He was then diagnosed with Glioblastoma (GBM). GBM is the most common and most aggressive type of brain cancer. As common as it is only 2-3 people per 100,000 cases are diagnosed. Unfortunately, our Eddie is one of them. He is currently undergoing his second round of chemotherapy, and he seems to be feeling at least a little bit better for now.  Eddie lives with his brother, Orlando, in Flemington and his sister Jane helps with caring for him.   

Eddie is a strong man with a strong sense of family and religion.  He has a big heart and talks to everyone who come in our restaurant as though they are his neighbors.  

In this occasion, our love and support aren’t enough for us here at Matt’s. We will be trying to raise money to help pay for his day to day expenses along with the growing medical bills.   We would like to show him how he is on all of our minds, and hopefully this can raise his spirits, and help get him through this amazingly difficult time. He has been such a wonderful part of the Rooster, and we’d like to show him how we feel.  We’re hoping you feel the same way too.
